Snow Days

So a few weeks ago I was going to post a "New Record" blog, listing things that are different since being in Rexburg...on that list was going to be the fact that I could still see grass on campus (aka barely any snow in sight), but I was too slow.

It has snowed probably 4 or 5 times now, kind of a Boise type snow, where it melts/turns to slush that same day, but it's definitely snowed! This morning we, once again, opened our door to a snow covered Rexburg and my first thought was "dang it, the one day I DON'T wear boots, it snows".

I remember when snow used to be the best thing that ever happened. In elementary school when it would snow I would LOVE walking to school in it, laying in it to make snow angels and snowmen without a care in the world, making snow ice cream for after school snack, going outside in the snow for hours, without even realizing that I'm cold, sledding with my sisters and doing so many fun things. Now...I dread it. I don't like walking on campus in the wet, slushy snow. I don't like how cold it makes me. Just the thought of how cold it is when it gets in my shoe or my coat makes me shiver. My sisters aren't around to go sledding with. I don't even have snow pants, so that if I ever DID go sledding I could be kept semi-dry! Oh how times have changed. I'm so lame!

I've decided that I will invest in some snow pants and make snow ice cream the next time we get a good snow. Because throwing snowballs is illegal in Rexburg I won't do that, but I will make at least one snow angel and maybe David and I will build a snowman! With this decision being made, I know that next time I walk out the door to a snow covered world, I'll be excited just like when I was a little girl. :)


Snow Ice Cream
  • 1 gallon snow
  • 1 cup white sugar
  • 1 tablespoon vanilla extract
  • 2 cups milk

Directions

  1. When it starts to snow, place a large, clean bowl outside to collect the flakes. When full, stir in sugar and vanilla to taste, then stir in just enough milk for the desired consistency. Serve at once.
